Are these fast food outlets some sort of franchising? If so, are the managers the boss or something? How about Carl's Jr? Are they a franchise too? How do you differentiate a franchise from a non-franchise company like Fish & Co?

Basically, all the fast food chains in Singapore are a franchise. Even the Ya Koon Toast (please advise spelling) has franchisees.
The "boss" bought the franchise from the franchise owner. The franchise owner provides the system of how the business operates, and the brand.

From overseas, MacDonalds and like are taken by master franchiser who will sub to franchisees. You cannot tell who are franchisees, as some are own by the master franchiser as the model is consistent throughout. Some employ experience manager to run it.

Well, in that case, who do you have to talk to, to become a sub franchisee for any fast food chain here in Singapore?

Have you been to this event before?
I wonder what it's like. Like the Comex/Sitex, but nothing but business for rent?

Not as messy as IT fair. This event is more for trade and corporate. There will be booth by Subway, Old Chang Kee and many others which I cannot remember. You can ask about any franchise that you are interested. They are more than willing to tell you the investment amount and fees incurred. The fees are not expensive. It is usually the setup cost.

I believe it will be a big eye opener, this event.
There seem to be a lot of organisations devoted to helping people buy and sell franchise.
Ali should go for this!
I just registered for it. Hopefully, I'll be out of camp and able to attend.

McDonald's & some of the other fast food resturants in Singapore are not really franchises..
For example, McDonald's works on a franchise concept in US & other larger markets but definitely not in Singapore..
These resturants are usually owned by the regional offices/owners/franchisees, or even the HQ themselves, maybe because of the smaller market size in Singapore..

As a rule of thumb, the bigger brands and chain resturants in Singapore are usually NOT franchisees.. For example McDonalds' is owned by regional offices/main franchisers who are responsible for distributing franchisees within a certain region.. So when you set up a branch resturant in a neighbourhood in Singapore, you don't liaise with the main HQ but rather with the "sub-contractors"..
At the same time, the smaller and localized ones are usually the bulk of the franchisees in the Singapore F&B industry.. You got to liaise directly with the owner and main offîce..
One rare example is Subway.. From what I know from last year, you got it directly from the Subway owner from Australia..
